Black Bean & Corn Salsa
Ingredients:
- ¼ (50 ml) of mayonnaise
- 2 tbsp (30) of lime juice
- ½ tsp of ground cumin
- 1 can (19 oz/540 ml) of black beans, rinsed and drained
- 1 can (12 oz/341 ml) whole kernel corn, drained
- 1 cup (250 ml) quartered grape tomatoes or cherry tomatoes
- ½ cup (125) of chopped red onion
- 2 tbsp (30 ml) of chopped fresh cilantro
- 1 tsp (5 ml) chopped jalapeno pepper (optional)
Preparation time:
- In medium bowl, blend mayonnaise, lime juice and cumin.
- Stir in remaining ingredients.
- Serve chilled or at room temperature.
Makes 4 servings. Prep time 10 minutes.
